This always depends on how you are going to prepare your dish:


Fillets:

  • With fillets whatever your purchase weight is will remain once cooked Serving per person 150g/250g.

Whole Fish:

  • Using a whole snapper let’s say 1.5kg-2kg in size this will feed 4 people.

Shellfish:

  • This depend on species and your prep times we usually remend following.
  • Oysters serving per person ½ dozen- 1 dozen.
  • Scallops serving per person 80/120g.
  • Peeled prawns serving per person 80/120g.

I’m worried about eating our fish stocks.is it a sustainable industry. It is understandable people are concerned about fish stocks yet it is the goal of the Australian fishing industry to be sustainable. This is not only important for the environment And to protect species it makes good sound business sense as well. The Australian fishing industry monitors this very closely.as a consumer you can play your part by selecting a variety of seafood and choosing seafood in season.
